Apple Crumb Pie

I hate myself for making this.  My husband, Logan and I almost ate the entire pie and I made it last night.  Gross.  Well, this is the second time I made my own crust.  Martha Stewart's Pate Brise.  My first attempt did not turn out so well.  It's not hard, you just have to follow directions and make sure NOT to OVER MIX.  I did the first time and the crust turned out tough and just downright disappointing.  This time it was better, but I can still improve.



Pate Brise (slightly modified from Martha Stewart's version)

2 sticks butter, cut into small cubes and frozen
2 1/2 cups flour
2 tsp salt
2 tsp sugar
1/4 to 1/2 cup ICE water


Add flour, salt and sugar to food processor.  Blend for a few seconds until aerated and mixed thoroughly.  Add frozen butter cubes and process for about 10 seconds, until large crumbs form.

Add water while pulsing the mixture until it resembles wet sand.  Test by pinching together between fingers. If it holds, it is done.  You want to see little butter pieces throughout the dough.  This will make it flaky and goooooood.  Make sure you DO NOT MIX LONGER THAN 30 SECONDS!!!!

Split into two and form discs.  Wrap in plastic wrap and place in fridge.  Allow to cool.  When ready to make the pie,  take out of fridge and lightly flour a cool, flat surface.  Roll out until large enough for a 9 inch pie pan.  Transfer from surface to pan by rolling it loosely around the rolling pin and then unrolling onto pan.   Then place into freezer until the apple and crumb parts are ready.

6 apples, pealed and sliced thinly
1/2 cup four
1/2 cup sugar
2 tsp cinnamon
1 tsp freshly grated nutmeg
1/2 tsp salt

Add to a bowl and toss until every piece is coated.  Let sit while you make topping.

Crump topping

1 stick salted butter, melted
1/2 cup flour
1/2cup sugar
tsp cinnamon
tsp nutmeg
approximately 1/2 to 2/3 cup quick cook oats (add until the mixture becomes crumbly)

Add together, leaving the oats for last.  Mix in oats until crumbly.  

Add apples to crust and top with crumbs.  Bake at 375 degrees for around 50 to 60 minutes.  If you notice your crumb topping becoming to dark, put a piece of foil over and allow to finish baking.

LET COOL for at least two hours and enjoy!
Pretty crust.
